Ingredients
Fresh mushrooms from their vegetable garden
Cooked white rice
Corn starch or potato starch
Salt and pepper
Oregano and thyme
Instructions
Prepare the Mushrooms:
Clean and finely chop the fresh mushrooms. Sauté them in a pan over medium heat until they release their moisture and become soft (about 5-7 minutes). Set aside to cool.
Mix the Ingredients:
In a large bowl, combine the cooked white rice, sautéed mushrooms, salt, pepper, oregano, and thyme. Mix until well incorporated.
Add the Starch:
Gradually add corn starch or potato starch to the mixture, stirring until the mixture holds together and can be easily shaped into balls.
Form the Meatballs:
With clean hands, roll the mixture into small balls, pressing firmly to ensure they hold their shape.
Cook the Meatballs:
Heat a little oil in a pan over medium heat. Fry the vegetable meatballs until golden brown on all sides, about 3-4 minutes per side.
